Makes about 8 small pancakes.
Mix the egg with the egg whites.
Mash the banana. Obviously, the riper banana the sweeter the pancake.
Mix the banana with the egg batter.
Add the oatmeal.
Add the cottage cheese.
Whisk or stir the batter.
Fry the pancakes in some coconut oil in a skillet.

Serve them as they are, with maple syrup..
..blueberries AND almond spread (almond butter). What a treat (and still fairly healthy)!
