How to make smoked peach cobbler in the alto shaam ctp


Cut and slice peaches onto a sheet tray. Lightly coat with flour, cornstarch & sugar.

Soak wood chips for 10 min.

Lay wood chips in smoker box.

Insert smoker box into the oven.

Load diced peaches.

Conv. mode 300F (149C) for 12 min- hot smoke button- 20% fan speed.

Create topping using butter, rolled oats, brown sugar and desired seasonings.

Butter individual serving dishes.

Allow peaches to sit in the smoke filled cavity for an extra 10 min before removing from the oven.

Fill cups half way with peaches and add crumble.

Fill remaining cups with peaches and finish with crumble topping.

Preheat combi to 375F (190C).

Bake for 15 min. @ 375F (190C).

Top with favorite ice cream to slowly melt into the cobbler!
